What's Cooking Wednesday....Sausage Balls

I learned a lot about parties and receptions and such during the eight years we lived in SMALLtown, GA.  There were certain things that were simply expected to be on the table at showers and teas and if they weren't....well, it was well commented on by the guests.  Lady Fingers, cheese straws, pineapple OR pimento cheese sandwiches and sausage balls.  I don't really care for the Lady Fingers.  If you've ever had a Russian/Danish/Mexican tea cookie, you've had a Lady Finger.  Instead of being round or spherical, the dough is shaped into cylindrical strips about the length of an index finger...hence, the name.  Cheese straws are sort of a butter cookie loaded with grated cheddar cheese and a pinch of cayenne.  Meh...nothing special.  The ONLY kind of pimento cheese I'll eat is homemade.  All it amounts to is cheddar cheese, mayo, red pimento and garlic....whir it in a blend-capable appliance and there you go.  It's a Southern thing, just trust me.  I do LOVE a good pineapple sandwich.  White bread exists for two reasons and pineapple sandwiches is one.  Tomato sandwiches are the other.  Again...a very Southern thing, but you might be surprised how tasty it is.  Ring pineapple, may and white bread...cut and seal the sandwich with one of those fancy sandwich crimper/cutters that you can buy from P*mpered Ch*f.  Very good and refreshing on a hot, summer day.

Sausage balls well, those are a completely different story.  We love 'em!  The next time you have brupper...breakfast at suppertime...try these.

1 lb. ground sausage
1/2 c. pancake/baking mix
1 c. finely shredded cheese

Mix sausage and cheese together.  Add baking mix.  Stir.  Form into bite sized balls.  Bake @375 until golden brown.

  1. In Belgium, we would eat something called Croque Madam (sp?). It was toast with ham, fried egg, a slice of pineapple, covered in cheese. Mmmmmmm....
