Yummy For The Tummy

Here's a couple of new snacks that have become my favorite to take to a party. 

Stuffed Pepperoncini
2 jars pepperoncini (Greek Peppers)
1lb package hard salami, Genoa salami, prosciutto, or  pepperoni (1lb will be MORE than enough for the two jars of peppers because not all the peppers are the right size for stuffing.  Whatever meat you have left over, just toss the rest in the fridge for lunch.)
1lb sliced cheese...provolone or mozzarella (Again, this will be plenty of cheese.  It's much easier to buy the packages slices or deli sliced cheese than to buy the cheese in blocks.)

Drain peppers in colander.  Cut top off peppers and pull out any seed bundles.  Make a slit down the side of each pepper.  Trim slices of meat and cheese to fit inside the peppers.  Stuff each pepper with meat and cheese.  Place on platter...watch them GO!

Pimento Cheese
2-8oz blocks cream cheese, softened
1/2 cup mayonnaise
4 cups shredded cheddar cheese
12 oz. jar of diced pimento, drained
Seasoning salt
Garlic powder
Cayenne pepper
Onion powder

Combine cream cheese, mayonnaise, shredded cheddar and pimentos.  Season to taste.  Chill for about an hour.  Serve with crackers, as a sandwich spread, burger topping.
